In the heart of the Jura, our restaurant is an ode to authentic flavours and seasonal produce. Here, everything starts with a philosophy: working with passion on the treasures of the Jura terroir, from local producers (but not only!) and from our permaculture vegetable garden. But what makes our approach truly unique is our mystery menu concept, specially designed to arouse your curiosity and your taste buds.

Each dish is an ephemeral creation, inspired by the seasons and enhanced by cuisine that respects nature. You will discover your menu the moment it is revealed on your plate, a moment where the unexpected mixes with excellence.

Whether you are a food lover or looking for new discoveries, Maison Zugno promises an extraordinary experience, where taste, creativity and respect for ingredients come together to offer a true sensory journey. Take a seat at our table and let the magic happen.

Every aspect of our cuisine reflects our identity and our roots in the richness of the Jura. Originally from the region, our Chef Quentin Defert, accompanied in the kitchen by Nicolas, enhances local products by creating dishes inspired by the seasons and nature.

Our passion for the terroir is reflected in a rigorous selection of the best ingredients, from local producers who share our vision of quality and authenticity.

Our cuisine is very personal, so personal that we grow our own aromatic herbs and, thanks to our permaculture vegetable garden, we harvest a wide variety of vegetables as well as some fruits and citrus fruits. This vegetable garden, maintained according to the principles of sustainable agriculture by our gardener Pierre, is the natural extension of our philosophy, where every action contributes to responsible and environmentally friendly gastronomy.

Our commitment to local know-how goes well beyond the kitchen. We work with talented artisans to enrich every detail of your experience, particularly in the art of the table. Among them, Atelier Noma, which makes unique plates for us from local raw materials, from the Nièvre. This integration in the region continues with BotaBota, a Jura craftsman named Gaëtan, who designed a green wall evoking the surrounding undergrowth, creating a poetic link between nature and our house.

Finally, our Maître d’Hôtel, Thibaut, a graduate of the Poligny hotel school and originally from the Jura, two things in common with our Chef, embodies our passion for excellence and local authenticity. Every detail of your visit is designed to reflect our attachment to Jura craftsmanship and heritage.

Eco-Friendly Practices

Our eco-friendly approach extends to all aspects of our restaurant:

  • No Printed Menus: We have eliminated printed menus to reduce our environmental impact.
  • Compost and Permaculture: Our homemade compost nourishes our permaculture garden, creating a virtuous cycle.
  • Locally Filtered Water: We serve filtered water to minimize transportation and glass usage, in line with our EcoTable vision.
  • Responsible Suppliers: We work we local producers to reduce our carbon footprint and ban plastic packaging.
  • Minimized Waste:  Our menus are designed according to the number of guests expected, thus avoiding any food waste.

The restaurant at Maison Zugno 

Composed of three small rooms, our restaurant plays the intimacy card.
The know-how of the artisans is highlighted: hand-made tapestries, plant walls and custom-made walnut furniture create a harmonious and delicate ensemble.

Hours (September to June):
Lunch: Saturday and Sunday from 12.00 pm to 1.30 pm
Dinner: Tuesday to Saturday from 7.00 pm to 8.30 pm
Restaurant closed on Tuesdays in November, December, and January

Hours (July – August):
Dinner: Everynight from 7.00 pm to 8.30 pm

Our creations are available in:
– 4 courses at €75 per person
– 5 courses at €85 per person

Our cuisine is entirely gluten-free! As part of an advance reservation, we are able to offer a vegetarian alternative to all our menus!

Lounge Bar: elegance and relaxation

Our Lounge Bar welcomes you every day until 11 p.m. Our Bar is the central point of our restaurant area where everything is designed to create a setting conducive to relaxation, whether for a solitary break or a friendly moment with friends.

Ideal for relaxing at any time of the day, you can enjoy a refined and very often local selection of drinks. Coffee, lemonades, wines and even spirits come from our local artisans.

For the most gourmet, our plates of local cheeses, subtly selected, are accompanied by local wines, creating a perfect harmony between regional flavors and tasting pleasure.
